COLUMBIA signature achieves major waste reduction with Generation Waste analytics platform

COLUMBIA signature, the premium hospitality service provider of COLUMBIA blue - The Leisure Group, has successfully introduced Generation Waste’s innovative analytics platform onboard the luxury cruise ship, Aroya, setting a goal of reducing food waste at least 70%. To date, the platform has experienced a remarkable 77% reduction in food waste.



Generation Waste’s platform employs cutting-edge technology to precisely monitor and analyse food waste production at every stage of restaurant operations, from meal preparation and cooking processes to plate waste management.



By providing detailed, actionable insights into how and where waste occurs, the system empowers onboard culinary teams to implement targeted reduction strategies, enhancing both sustainability and operational efficiency. The food waste targets refer to ship-wide averages per guest.



Inspired by these outstanding results, COLUMBIA blue has confirmed plans to roll out the Generation Waste analytics platform across additional projects within its expansive leisure portfolio.

By closely monitoring the statistics as and when they are uploaded to the platform and with every restaurant, café and bar having waste targets to meet, the COLUMBIA signature team can immediately jump in to offer support if targets are falling short to find out what improvements can be made.
